Mastering the Chicken

Chicken is perhaps the most popular meat in America and still one of the most affordable ones. Unfortunately production methods have all but robbed the chicken of its flavor and, in some instances, made it a less than healthy dining choice. This class will focus on methods of handling and preparing chicken. In this class you will learn how to prepare a perfect French bistro style roast bird and debone a whole chicken to make chicken lollipops with sweet and sour sauce, chicken braised in red wine and chicken schnitzel with brown butter and sage.
